  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1 teaspoon salt

  1. Preheat oven to 350°F. Grease a 9 x 5-inch loaf pan thoroughly on all sides using butter or non-stick baking spray.
  2. In a large mixing bowl, combine mashed bananas with melted butter. Add granulated sugar and brown sugar, mixing until well combined.
  3. Add eggs, Greek yogurt, and vanilla extract to the bowl. Whisk until smooth and homogeneous.
  4. Add flour, baking soda, and salt to wet ingredients. Fold gently with a rubber spatula just until no flour streaks remain (do not overmix).
  5. Pour batter into prepared pan, spreading into an even layer. Bake for 45-50 minutes until knife inserted in center comes out mostly clean.
  6. Cool in pan for 15 minutes, then transfer to wire rack to cool completely before serving.

Notes

Use overripe bananas with brown spots for maximum sweetness. Room temperature eggs mix better into batter. Do not overmix the batter - lumps are okay. Allow bread to cool in pan before removing to prevent breaking.
