  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tablespoon fresh parsley, chopped
  • Fresh thyme or rosemary (optional)

  1. Pat the chicken breasts dry with paper towels. In a small bowl, mix together garlic powder, onion powder, paprika, black pepper, and salt. Rub this seasoning mixture evenly over all sides of the chicken breasts.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 5-7 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F). Remove chicken from skillet and set aside.
  3. Reduce heat to medium and add butter to the same skillet. Once melted, add minced garlic and cook for 1 minute until fragrant. Pour in chicken broth and scrape any browned bits from the bottom of the pan.
  4. Return the chicken to the skillet and spoon the butter sauce over the top. Cook for another 2-3 minutes to warm through. Garnish with fresh parsley and serve immediately.

Notes

Let chicken come to room temperature for 15 minutes before cooking for even cooking. Add fresh lemon juice to the butter sauce for a bright, tangy finish. Don't overcrowd the skillet - cook in batches if necessary.
