- Preheat your oven to 375°F (190°C).
- Prepare the peaches: In a large bowl, toss the sliced peaches with 1/2 cup of sugar and cinnamon. Set aside.
- Melt the butter: Place the butter in a 9x13-inch baking dish and melt it in the preheated oven. Once melted, remove the dish from the oven.
- Make the batter: In a separate bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Stir in the milk and vanilla extract until just combined.
- Assemble the cobbler: Pour the batter over the melted butter in the baking dish. Do not stir. Spoon the peach mixture evenly over the batter.
- Bake: Place the dish in the oven and bake for 40-45 minutes, or until the crust is golden brown and the peaches are bubbly.
- Serve warm: Let the cobbler cool slightly before serving. Enjoy it on its own or with a scoop of vanilla ice cream.
Notes
Use ripe but firm peaches for the best texture. For a crispier topping, sprinkle a handful of rolled oats or chopped nuts over the batter before adding the peaches. Store leftovers in the refrigerator for up to 3 days.
