- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the butter and sugars together in a large mixing bowl until light and fluffy. This should take about 2-3 minutes.
- Add the eggs and vanilla to the butter mixture, beating well after each addition.
- Combine the dry ingredients in a separate bowl: flour, baking soda, salt, and cinnamon. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Stir in the oats and raisins (if using) until evenly distributed.
- Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers look set.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Use room temperature butter for easier mixing and a smoother dough. Don't overmix the dough to avoid tough cookies. Chill the dough for 30 minutes before baking if you want thicker cookies. Customize your cookies by adding chocolate chips, nuts, or dried cranberries instead of raisins.
